If I only had a brain...

I might just be dangerous. And no, I haven't turned into The Scarecrow from The Wizard of Oz, although some days I feel like someone's sending flying monkeys my way. Oh, wait, that was just my therapist. (And yes, he does keep little rubber flying monkeys in his desk; they were a gift from his daughter.)

Today's screw-up du jour involves a cake that I almost forgot to bake. A birthday cake for a friend-and-coworker who turns 26 tomorrow. Yep, he's still a young pup, but he's a good guy and well worth a homemade b-day cake. I adapted the Special Mocha Cupcakes recipe from the Taste of Home website into a pan version. Much easier to frost that way! The doubled recipe was just the right volume for a standard cake pan, although I had to increase the baking time. I can't tell you by how much, since I forgot to turn the damned timer on and had to keep a close eye on the cake so it didn't burn....
